Among cosmetic polysaccharides, beta-glucan holds a special place. It is a long molecule formed by the assembly of glucose units. Its structure and branching vary according to its origin — a point that explains the diversity of glucans found in formulations. Oats provide chains with β-1,3 and β-1,4 linkages, while yeast and certain mushrooms yield glucans branched in β-1,3 and β-1,6. These specific, high-molecular-weight structures explain the enveloping feel of beta-glucan and its ability to form a flexible film on the skin's surface.

Ingested, beta-glucans are dietary fibers. Those from oats are studied in the health field, particularly by EFSA regarding blood cholesterol (LDL) and glucose. Those from yeast, baker's yeast, and certain mushrooms are the subject of specific studies on the immune system: immune cells such as macrophages, responses related to immunity and resistance to winter infections, and respiratory comfort. These immune molecules are ingested, never applied to the skin.

These studies relate to diet and the body: they concern food supplements and dietary intake, never cutaneous application. Their conclusions and studies say nothing about the cosmetic effectiveness of a skincare product: they concern ingested molecules and make no promises for the skin.
