From chestnut tree to fruit: botany and terroir

The chestnut is the edible seed of the common chestnut tree, Castanea sativa, a majestic tree that can live for centuries. Every autumn, the fruit ripens protected by a spiky burr, which opens at maturity to release two to three fruits with brown, lustrous skin. The chestnut tree was long called "the bread tree" in mountainous regions, so much did its cultivation nourish entire territories: chestnuts were gathered by the basketful, fruit after fruit.

In France, two regions are authoritative: Ardèche and the Cévennes. The Ardèche department holds the AOP Châtaigne d'Ardèche, a protected designation of origin recognized by the INAO, the National Institute of Origin and Quality: its specifications include dozens of local varieties, guarantees of quality and regional anchoring. This demand for origin, specific to an exceptional chestnut terroir, resonates with the NOPAL LIFE philosophy, where each ingredient is chosen for its traceability as much as for its sensory qualities.

Botanically, the fruit consists of a floury kernel rich in complex carbohydrates, fiber, minerals, and vitamins — including vitamin C and B vitamins. The confusion is persistent. Here are the concrete benchmarks that distinguish the edible fruit of the chestnut tree from the decorative one of the horse chestnut tree.

One last useful benchmark: in cooking, crème de marrons (chestnut spread) and marrons glacés (candied chestnuts) are actually prepared from large chestnuts of varieties called "marrons". The true horse chestnut, fruit of the horse chestnut tree planted in our schoolyards, is not edible: between chestnut and horse chestnut, only the former finds its way to the plate as well as into skincare.
