Behind the world's most beloved fragrance lies a climbing orchid, a flower that opens for only one morning, and nearly two years of patience. This sheet describes the vanilla bean as a buyer would read it—species, terroir, vanillin content, curing, quality—then what it truly brings to a cosmetic product, and what it does not.
The essentials to remember
- Vanilla is the fruit of a tropical orchid. Only three species are cultivated worldwide — Vanilla planifolia, Vanilla tahitensis, and Vanilla pompona — and their vanillin content ranges from less than 0.5% to 2.5% of dry weight.
- The green pod is completely odorless. Its entire aromatic profile is developed during curing: blanching, sweating, sun-drying, then six to eight months in trunks, yielding about 5 kg of green vanilla per kilo of black pods.
- Madagascar alone accounts for nearly 40% of global production (FAOSTAT, 2023), ahead of Indonesia, Mexico, and Papua New Guinea.
- In cosmetics, extract, oleoresin, absolute, or oil macerate are used — never food-grade flavor. The INCI code to look for is Vanilla Planifolia Fruit Extract.

In brief
An orchid, a flower of a single morning
Vanilla is the fruit of a vine from the orchid family, originating in the humid forests of the Gulf of Mexico. The plant climbs along tree trunks, clinging with its aerial roots, and can grow over ten meters long. Its pale green, slightly yellowed flowers appear in clusters in spring. Each flower opens only once, for a single morning, and closes before noon. If nothing happens during these few hours, the flower falls, and the fruit will never develop.
In its native region, local wild bees handle the pollination. Everywhere else in the world — and vanilla is now cultivated outside of Mexico globally — no insect is capable of doing so. Therefore, every vanilla pod produced on the planet is the result of human intervention, performed flower by flower, with the tip of a bamboo splinter, early in the morning, before the sun closes the corolla.
This action has a date and a name. The Totonacs, on the Gulf coast, cultivated and cured the pods even before the arrival of the Spanish; the Aztecs called it tlilxochitl, the black flower, and blended it with cocoa in a drink reserved for the elite. Europe discovered vanilla in the 16th century but struggled for three centuries: the transported vines would flower but never bear fruit. In 1841, on Bourbon Island — now Reunion Island — a twelve-year-old slave named Edmond Albius developed manual pollination. The technique spread within a few years throughout the Indian Ocean and has remained unchanged since.
Eight to nine months then separate pollination from harvest, the time it takes for the fruit to reach its final size and for its tip to begin to yellow. Harvesting too early means the pod will remain poor; harvesting too late means it will split on the vine and lose its commercial value. From flower to ready-to-use pod, nearly two years pass in total.
The great terroirs, and what they change
Vanilla requires a humid tropical climate, partial shade, a distinct dry season for curing, and a large workforce. These conditions define a narrow production map. Madagascar reigns supreme: the SAVA region, in the northeast of the island, concentrates most of the plantations, and the country alone accounts for approximately 40% of global production (FAOSTAT, 2023). Indonesia, Mexico, Uganda, and Papua New Guinea follow.
The name Bourbon does not designate an species or a variety: it is a geographical indication that groups together planifolia vanilla produced in Madagascar, Reunion Island, Comoros, Mauritius, and Seychelles. It guarantees a recognizable profile—round, warm, caramel, and woody—which has become the global benchmark for vanilla taste. Reunion's own production is tiny today, a few tons per year, but its historical prestige remains intact: it was from this island that the pollination technique that made cultivation possible everywhere else originated.
Tahiti tells a different story. The vanilla there belongs to a distinct species, Vanilla tahitensis, whose pod is shorter, fleshier, and whose olfactory profile frankly diverges from the Bourbon model: floral, anise, licorice, with an accent of peach and ripe fruit. Its vanillin content is ten times lower; its potency also. It is not bought for its strength, but for its subtlety. Papua New Guinea produces both planifolia and tahitensis, often at more accessible prices, with a more heterogeneous curing quality.
Mexico, finally, remains the birthplace. Its production is now marginal on a global scale, but its pods, spicier and slightly smoky, hold a special place among connoisseurs. India, Uganda, and Indonesia complete the picture with growing volumes and profiles still under development.

From green pod to fragrance: the five stages of curing
When picked, the pod smells absolutely nothing. Everything happens afterwards.

What happens during scalding and sweating deserves a chemistry explanation: the green pod does not contain vanillin, but an odorless precursor, glucovanillin. Heat releases the plant's enzymes, which break the sugar bond and release the aromatic molecule. This is exactly why a fresh pod taken from the vine smells of nothing, and why no vanilla in the world is sold green.
Drying requires special attention, as it is the stage where the best harvests can be lost. The pods are exposed to the morning sun on drying racks, one to three hours depending on the intensity, then brought into the shade for the day. Too much sun and the surface hardens, trapping moisture inside, which prepares for mold; not enough, and the residual moisture remains too high for safe storage. Experienced preparers judge by hand: a ready pod bends, wrinkles slightly, and is no longer sticky.
The result of this long transformation can be summarized in two figures. The first concerns weight: a green pod weighing 15 to 20 g reduces to 3 to 5 g once cured, a loss of approximately 80% of its initial weight. The second follows from this—it takes about 5 kg of green vanilla to obtain 1 kg of black pods.
Add the nine months of maturation on the vine and the eight months in curing chests, and each pod represents nearly two years of production. It is this time that we pay for—and that synthetic aroma does not.
The aromatic profile: much more than just vanillin
A cured pod contains over two hundred identified aromatic compounds. Vanillin largely dominates the whole, but it alone does not make the fragrance: it is the entourage that accompanies it—vanillic acid, anisic aldehyde, guaiacol, phenolic derivatives, traces of woody compounds—that gives natural vanilla its depth and longevity. A trained nose can easily distinguish a pod from its laboratory-reconstituted equivalent, precisely because the latter has only one note to play.
For a Madagascar planifolia, the typical description is as follows: a round and sweet attack, a heart of caramel and toasted almond, a base of dry wood, leather, and dark chocolate. On a spicier pod, often Mexican, a smoky hint is added. On a tahitensis, everything changes: flowers take the lead, anise and licorice settle in, a note of ripe peach permeates the whole. The pompona, on the other hand, leans towards tonka bean and blond tobacco.
The vocabulary used to describe these aromas is borrowed from tasting. We speak of top notes—what is perceived in the first second—heart notes, and base notes, exactly as in perfumery. Here are the benchmarks we use to characterize a pod when purchasing.

This richness has a direct consequence in formulation. A gourmand note built on a fruit extract lasts a long time on the skin and evolves over hours; a note built on a single molecule flattens out in twenty minutes. For a treatment applied every evening, this difference in longevity is worth its price. It also explains why two formulas showing the same vanilla in the INCI don't deliver the same signature: the species, origin, and curing quality change everything, well before the dosage.
Black, brown, red: understanding the classification

This classification describes a presentation, not a richness. It is the most common misunderstanding in the market: it is assumed that red pods are of lesser quality, whereas they can display a vanillin content strictly equivalent to that of a beautiful black pod. What degrades them is a split that occurred at harvest, insufficient length, or moisture content too low for direct sale—three appearance defects, with no effect on the aromas.
A pastry chef and a cosmetic formulator therefore do not buy the same batch. The first wants a presentable, supple pod, whose black seeds will be visible in a custard or a ganache; he pays for appearance as much as for flavor. The second wants yield from extraction: he grinds, macerates, filters, and the initial appearance is not found in any bottle. For him, buying red pods is a decision based on economic common sense—and not a compromise on quality.
Finally, a word about the codes in circulation. Customs code 0905 identifies vanilla upon import; the INCI code names the ingredient on a cosmetic package; CAS code 121-33-5 designates the vanillin molecule. Three distinct nomenclatures, three uses. None of these codes alone provides information on the actual quality of a batch: a perfectly accurate code can accompany mediocre red pods as well as superb red pods.
An Island Crop
Look at a map of global production: vanilla is almost exclusively an island crop. Madagascar leads, followed by Reunion, Comoros, Mauritius, Seychelles, Java and Bali, Tahiti and the Society Islands, and finally the large island of Papua New Guinea. This is not a geographical coincidence. The vine requires constant warmth, high humidity, forest shade, and a distinct dry season to allow for sun-drying. Tropical island climates meet these conditions better than continents.
This insularity also makes the sector fragile. An island means a limited area, one season, one port. When an island's harvest is compromised, no neighboring region can compensate. Papua New Guinea illustrates the other side of the phenomenon: having entered global production late, it has built significant volumes in twenty years, with curing quality still uneven from village to village, but with a capacity to absorb part of the demand when the Indian Ocean falters.
For the buyer, the consequence is concrete: two batches with the same origin, the same species, and the same year can differ significantly. The island, the slope, the altitude, the sun-drying process, and the actual time spent in trunks weigh as much as the name printed on the bag. This is why we prefer to taste and smell a batch rather than read its data sheet.
Species, variety, appellation: three words often confused
The species is botanical: Vanilla planifolia, Vanilla tahitensis, Vanilla pompona. The variety designates a local population selected by growers within a species, with its particularities of vigor, pod size, and precocity. The appellation, finally, is commercial and geographical: Bourbon, Tahiti, Mexico. Three distinct levels, systematically mixed in marketing descriptions.
A concrete example: a pod sold as "Bourbon vanilla" is always a planifolia, but the variety cultivated in Madagascar is not exactly the same as that planted in the Comoros, and the result in taste is noticeable. Conversely, a pod advertised as "Tahitian vanilla" refers to an entire species, tahitensis, whose main cultivated variety is also found in Papua New Guinea. As for pompona, richer in coumarin and poorer in vanillin, it remains a collector's curiosity, appreciated for its tonka bean accent.
This clarification is not botanical pedantry. When a brand writes "vanilla" without specifying the species, it allows itself to change raw material from one batch to another without altering its label. Specifying the species, variety, and origin means committing to consistency—and accepting to be judged on it.
Two Islands, Two Histories
Reunion Island holds a special place. It was there that the technique that made all global production possible was invented, and it was from there that the cultivated variety spread to Madagascar, Comoros, and Mauritius. The island gave its old name—Bourbon—to the most prestigious appellation on the market. However, its current production amounts to only a few tons per year, compared to thousands of tons from Madagascar. Reunion's growers chose the opposite of volume: very long pods, extended curing, high proportion of frosted pods, and direct sales. What is bought there is a signature, not a raw material.
Papua New Guinea tells the exact opposite story. A newcomer to the landscape, it has built significant production in one generation, driven by small growers and a dual presence of species: planifolia coexists with tahitensis on the same islands, which is rare. The quality there remains heterogeneous—the residual moisture of batches varies greatly depending on the villages and the drying process—but the best Papua New Guinea pods stand up to comparison with those from the Indian Ocean, at a significantly lower price.
Between these two extremes, Reunion and its rarity on one side, New Guinea and its volume on the other, each buyer sets their priorities. We set ours where traceability remains verifiable: named species, named island, dated harvest. Vanilla without an address has no story.
Our purchasing criteria for a batch destined for extraction
Since cosmetics use extract and not the whole pod, our specifications have nothing to do with those of a delicatessen. Here are the five questions we ask, in order, when presented with a batch of red pods.
- Which species and which variety? A planifolia for roundness, a tahitensis if a floral accent and a peach note are desired. The local variety is requested in writing, not inferred from the price.
- What moisture content? Between 15 and 25% for red pods. Below that, the material is brittle and poor; above that, the batch risks molding in transit. Moisture also affects the invoiced weight.
- What vanillin content? An analysis report is required. For a planifolia, a minimum of 1.5% of dry weight is expected; below that, extraction yield collapses and the price per kilo of extract explodes.
- Which harvest campaign? A pod from the latest harvest does not have the same profile as a two-year-old batch, which is drier, woodier, and often richer in leather notes. Neither better nor worse: different, and to be embraced.
- What documentary traceability? Customs code, island of origin, cooperative, date of packing in trunks. Without these elements, the batch is rejected, regardless of its appearance.
This framework seems strict for vanilla intended to be ground. In reality, it is the only way to obtain, year after year, an extract that smells the same—and that is exactly what a customer expects from a product they repurchase.
What skincare borrows from gastronomy
The vocabulary of cosmetic vanilla comes entirely from the kitchen. A pod is described like a vintage: its flavor, aromas, power, and length on the palate. Pastry chefs worked with it long before formulators, and it was they who established the benchmarks still used today—the pod split for creams, the one infused for ganaches, the one reserved for ice creams because its seeds are visible.
This heritage explains the kinship between a gourmand skincare product and a dessert. The same pairings work: vanilla with chocolate and caramel, vanilla with almond, vanilla with yellow fruits—apricot, peach—or with sweet spices. The same imbalances also lurk: too much sugar and the whole becomes cloying, too many spices and the sweetness disappears. A formulator creating a gourmand note thinks like a pastry chef, with only one additional parameter: the product must still be pleasing after thirty applications.
An essential difference remains. In a custard, flavor matters as much as fragrance; on the skin, only the fragrance exists. All the work then consists of finding, by smell alone, the roundness that a dessert achieves through taste, fat, and temperature. This is why the best gourmand notes in cosmetics rely on fatty substances—cocoa butter, vegetable oils—which prolong the diffusion of aromas for several hours.

Two words on tonka bean, since it comes up in every conversation about gourmand notes: it has nothing botanically to do with vanilla, but its coumarin profile—cut hay, bitter almond, sweet spices—is close enough that the two materials are sometimes confused by the uninitiated nose. Vanilla pompona, precisely, naturally leans this way. It is the only one of the three cultivated species said to smell of tonka before it smells of vanilla.
Reading a pod like a buyer

The trade traditionally classifies the harvest into three qualities. Black pods, long, pliable, and shiny, are sold as-is and used in high-end pastry. Brown pods, a little drier or slightly marked, are used for the same purposes at a lower price. Red pods, shorter, sometimes split at harvest, are considered less presentable but remain perfectly rich: this is precisely the batch that the industry destines for extraction, and therefore what supplies cosmetics.
A word about preservation, since the question always comes up: pods can be kept for one to two years in an airtight glass tube, at room temperature, away from light. Never in the refrigerator — cold causes condensation that promotes mold. If a pod hardens, a night in warm milk or vegetable oil will make it pliable enough to be split.
Natural extract vs. synthetic aroma: read the label
Less than 1% of the vanillin consumed worldwide actually comes from the pod (Sinha et al., 2008). All the rest is produced chemically — from petrochemical guaiacol or lignin from the paper industry — or, more recently, by biotechnological fermentation of ferulic acid extracted from rice bran. This vanillin is molecularly identical: same CAS code 121-33-5, same formula. But it is alone. It carries neither the two hundred secondary compounds, nor the roundness, nor the persistence that make up the trail of a true fruit extract.
In an INCI list, the difference can be read in three seconds. Vanilla Planifolia Fruit Extract or Vanilla Planifolia Fruit Oil refer to a raw material derived from the fruit. A simple "Parfum / Fragrance", or the isolated mention "Vanillin", indicates an aromatic reconstitution. Neither is disqualifying in itself — Regulation (EC) No 1223/2009 governs the labeling of both — but only the former justifies the price, the story, and the promise of a noble ingredient.
A useful benchmark: the position in the list. A vanilla extract generally appears in the last third of the INCI, alongside other active ingredients present in low doses. If it appears just after water and emollients, it is unlikely to be a pod extract — the raw material would be far too expensive.
At NOPAL LIFE, the rule is simple and without exception: if the word vanilla appears on packaging, the ingredient must appear in the INCI under its botanical name. Otherwise, it is called by its name — a fragrance — and written as such.

Beyond these benchmarks, the sweet note saturates and the product becomes tiring with use: what seduces at the first application becomes heavy by the twentieth. This is the main error of gourmet formulas, and it only becomes apparent after several weeks of testing.

The right dosage of a gourmet note is one you no longer smell when you wake up the next day.
Price, supply chain, and fragility of a crop
Vanilla is the second most expensive spice in the world, after saffron. This position is not a marketing stance: it results from manual pollination, curing time, and the geographical concentration of production. When a cyclone crosses northeastern Madagascar, the global price shifts. In March 2017, Cyclone Enawo destroyed a significant portion of the region's plantations; the price of the pod exceeded $500 per kilogram in the following months, before significantly decreasing in the early 2020s.
This volatility has cascading effects. High prices encourage early harvesting of immature pods, which are low in flavor, and fuel theft in plantations. They also accelerate the substitution of synthetic vanillin in the industry. Conversely, a collapse in prices discourages growers, who uproot vines in favor of food crops — and prepares for the next shortage, four years later, the time it takes for a replanted vine to produce flowers again.

Is cosmetic vanilla the same as culinary vanilla?
Same fruit, different preparation. In pastry, the pod is split and scraped to flavor creams, ganaches, and ice creams; in cosmetics, calibrated, filtered, and controlled extracts, oleoresins, and macerates are used for prolonged skin contact. The raw material is identical, but the specifications are not.
What is the vanillin content of a pod?
From 1.5 to 2.5% of dry weight for a well-cured Vanilla planifolia, and only 0.1 to 0.5% for a Vanilla tahitensis, whose interest is floral and not powerful. On a frosted pod, this crystallized vanillin is visible to the naked eye, in the form of fine white crystals.
Is it suitable for sensitive skin?
Properly dosed fruit extract is well-accepted by most skin types. Aromatic reconstitutions called "vanilla" are more often the cause of sensitivity reactions. Check for the presence of Vanilla planifolia in the INCI list and, if in doubt, test on the bend of your elbow 48 hours before applying to the face.
Bourbon, Tahiti, Papua: what's the difference for a skin care product?
Bourbon vanilla from Madagascar and Reunion Island gives a round, caramel, and woody scent: this is the default choice for a comforting skin care product. Tahiti and Papua New Guinea offer a floral and aniseed profile, with peach accents, more suitable for a light fragrance. Pompona, marked by tonka bean, remains anecdotal.
Why does a green pod smell of nothing?
Because it does not yet contain vanillin, but an odorless precursor, glucovanillin. Scalding at 63-65°C releases the plant's enzymes, which break the sugar bond and reveal the aromatic molecule during steaming. Without curing, there is no fragrance.
How to store your pods?
One to two years in an airtight glass tube, at room temperature and away from light. Never in the refrigerator: condensation promotes mold. A hardened pod regains enough suppleness after a night in a little warm vegetable oil.
What is a frosted pod?
A pod whose surface is covered with fine white crystals of crystallized vanillin, a sign of particularly rich content and long curing. This phenomenon mainly appears on high-quality black pods, stored for several months. It should not be confused with mold: frost is crystalline and dry, mold is fuzzy, gray or greenish, and smells musty.
Are red pods of lower quality?
No, not in content. Red pods are downgraded based on appearance criteria—shorter length, lower humidity, split during harvesting—and not on their richness in aromas. This is precisely the category that the industry allocates for extraction, and thus the one that supplies cosmetics and flavorings. Paying the price of a black pod only to grind it would make no sense.
How much does a pod weigh, and how much does it lose during curing?
A green pod weighs 15 to 20g at harvest and retains only 3 to 5g after curing, representing approximately 80% weight loss, mainly water. This ratio explains the rule of 5 kg of green vanilla for 1 kg of black pods, and a significant portion of the final price.
Can you make your own macerate at home?
Yes, provided you accept its limitations. A split pod in 100 ml of vegetable oil, kept away from light, for three weeks at room temperature, yields a pleasant macerate. It doesn't keep for long, has no guaranteed content, and has not undergone any microbiological control: reserve it for the body rather than the eye contour.
Vanilla and tonka bean: what's the difference?
Two plants with no botanical connection. Tonka bean owes its fragrance to coumarin — cut hay, bitter almond, spicy accents — while the pod owes its scent to vanillin. The two are often confused by smell, and Vanilla pompona further blurs the lines as it naturally leans towards tonka. In pastry, they are readily combined in creams and ganaches; in skincare, tonka serves as a base, vanilla as a heart.
How to recognize a good pod in a store?
Four steps. Look at the length: beyond 16 cm, the maturity was good. Bend it around a finger: it should curl without breaking. Smell it: deep and round, never acidic or pungent. Finally, check the label: species, origin, harvest year. White crystals on the surface—a frosted pod—are a bonus, not a defect. Drier red pods are still an excellent purchase if you plan to make a macerate or vanilla sugar.
Does the word "flavor" have meaning in cosmetics?
Not in the strict sense: on the skin, there is no flavor, only aromatic compounds perceived by smell. Culinary vocabulary has been adopted for lack of a better alternative, because descriptors—caramel, almond, spicy, yellow fruits—remain the most evocative. We therefore use it as an assumed metaphor, never as a promise of effect.
Why is quality vanilla so expensive?
Because each flower must be hand-pollinated in one morning, then waited for nine months until harvest, followed by six to eight months of curing, to retain only one kilogram of black pods from five kilograms of green vanilla. None of these steps can be mechanized to date, and production remains concentrated on a few islands exposed to cyclones.
Five common misconceptions that cost a lot
"A frosted pod is moldy"
Frost is a crystallization of vanillin on the surface: it is a sign of a rich and long-cured pod, not an alteration. Mold, on the other hand, is fuzzy, gray or greenish, and is accompanied by a musty smell. Throwing away a frosted pod is like throwing away the best of the batch.
"Red pods are a byproduct"
Red pods are downgraded on appearance, never on aroma. They constitute the normal material for extraction: oleoresins, absolutes, macerates. A formulator who rejects red pods pays twice the price for a strictly identical result once the batch is ground.
"Natural vanilla and synthetic vanillin are the same"
The molecule is identical—same CAS code—but it comes alone. A pod extract provides over two hundred aromatic compounds, the combination of which produces a lasting and nuanced effect that no isolated molecule can replicate. The difference is noticeable to the nose in thirty seconds.
"The richer a pod is in vanillin, the better it is"
Power is not finesse. A tahitensis, ten times less rich, develops a floral, aniseed bouquet, with that peach note that pastry chefs look for in light creams and ganaches. The right criterion is the intended use—not the number on the analysis report.
"Vanilla is a cosmetic active ingredient"
It is not, and we will never present it as such. Its contribution is sensorial and softening. This is already a sufficient reason to include it in a product—provided we don't make it say what it doesn't.
Choosing your vanilla according to its use
For a comforting skincare product. Aim for a Bourbon planifolia, in macerate or extract. The aromatic power is there, the round and caramelized profile blends with all fatty substances, and the raw material is available worldwide. If budget is a concern, well-analyzed red pods do exactly the same job as a batch of frosted black pods, for a third of the price.
For a light summer fragrance. Turn to tahitensis. Its profile—described here using culinary terms for lack of specific skincare vocabulary—evokes white flowers, anise, and ripe peach, without the heaviness of a caramel accord. Its low vanillin content becomes an advantage here: the scent remains transparent, even when generously dosed.
For a woody base note. Pompona and its tonka bean accent provide a powdery, cut-hay, bitter almond base, with spicy accents that neither Bourbon nor Tahiti possess. It is a niche material, difficult to source, reserved for sophisticated compositions.
For home cooking. Buy black or brown pods rather than red ones: you will split them, scrape them, and show them. The black seeds in a pastry cream or ganache are part of the pleasure, and the flexibility of the pod makes the gesture easy. Then reserve the exhausted pods for vanilla sugar or a homemade macerate—nothing is wasted.
In all cases, read the code. On a cosmetic package, the INCI code tells the truth that the marketing facade rounds out: Vanilla Planifolia Fruit Extract refers to a material derived from the fruit, "Parfum" refers to a composition. On a grocery bag, the mention of the species and origin plays the same role. A product that names neither probably has something it doesn't want to say.
