Quince (Cydonia oblonga) is the autumn fruit of the quince tree, a small tree in the Rosaceae family, a close relative of apple and pear trees. Native to the Caucasus and cultivated since antiquity around the Mediterranean basin and then throughout Europe, this golden fruit, recognizable by its downy skin, is harvested from October to November — a short season, when its delicate fragrance already perfumes the orchard.
Too tart and firm to be eaten raw, it first became prominent in cuisine: quince paste, jelly, compote, syrup, and steamed preparations made it a prized seasonal fruit, rich in pectin — the very same pectin which, concentrated in the seeds, led cosmetologists to discover its gel.
