Originating from the humid forests of southern India and Sri Lanka, green cardamom is the fruit of a perennial plant of the Zingiberaceae family—the same botanical family as ginger. In French, it is called green cardamom; its scientific name, Elettaria cardamomum, distinguishes it from black cardamom (genus Amomum), which is smokier and more rustic. Each pod, harvested while still slightly green, contains small brown-black seeds: this is where most of its fragrance is concentrated.
Long considered one of the most sought-after spices in the world—its price rivaled that of cinnamon and saffron—cardamom is today a pillar of Middle Eastern and Scandinavian cuisines.
