Green anise (Pimpinella anisum) is a plant from the Apiaceae family, a cousin of fennel, caraway, and dill. Native to the Mediterranean basin and the Near East, this aromatic plant is cultivated for its small seeds, whose sweet taste and fragrance have spanned centuries. Today, it is found in agriculture, including the organic sector, where the quality of the seeds and their richness in aromas make all the difference.
Standing about 50 to 60 cm tall, the plant bears delicate, cut leaves and small white flowers clustered in umbels, which give way to seeds once dried.
